There’s been a series of conflicting observational studies that either show or don’t show (depending on which one you’re looking at) a link between saturated fat consumption and heart disease. To try to figure out what’s going on we discuss what the randomized controlled trials say, which are better at establishing causation, and also talk a lot about lipid biology… and genetics!
